Any readers who garden know that if you grow winter squash, come fall and wintertime, you’ve got stores that need using up. Sometimes I’m practically drowning in squash, if that’s even possible. Try some of these delicious and healthy paleo winter squash recipes!

1. Chunky Beef and Vegetable Stew
This beef stew has everything just perfect: tender beef, perfectly cooked vegetables, and richly flavored broth. You’ll need beef cubes, red wine, almond flour, tomato paste, butternut squash, carrots, leeks, mushrooms, celery, and more. A great use for your winter butternut stores!

2. Caramelized Butternut Squash With Cacao Butter and Coconut
Think you couldn’t possible enjoy a vegetable for dessert? Think again! This squash is delicious with golden caramelized edges, cacao butter, honey, vanilla bean paste, sea salt, and a dusting of finely shredded coconut. I’d add a few mini chocolate chips, but I can’t help myself.

3. Kale Sausage Soup
With butternut squash, sweet Italian sausage, red onion, black garlic, celery, sherry vinegar, and other tasty flavors and nutritious ingredients, you know this soup is going to be nothing but fabulous. It’ll warm you up on a chilly evening, for sure.

4. Sausage, Onion, and Kale Stuffed Acorn Squash
Acorn squash is among my favorite winter squashes because of its soft, sweet, and nutty flavor that’s still mild enough to be enjoyed alongside other ingredients and fillings, like onion, spicy Italian sausage, kale, coconut oil, salt, and freshly ground black pepper.

5. Roasted Butternut Squash Soup With Bacon and Brussels
Now, there are a lot of butternut squash soup recipes out there. A lot. If I wanted, I could populate this entire list just with butternut squash soup. But in my opinion, this is a soup that’s only good if done really right, so I only share the best. This one, with bacon, apple, cinnamon, and Brussels sprouts? Yes.

6. Butternut Squash Chicken Curry
This fabulous curry dish includes onion, chicken breast cubes, white pepper, butternut squash, garam masala spice, curry powder, coconut milk, lime juice, tomato, and spinach. It’s healthy and hearty served on its own or over cauliflower rice.

7. Butternut Squash Souffle
Butternut squash is a particularly dense squash, but you can magically turn it light as a cloud with this soufflé recipe! You’ll need butter, squash, honey, vanilla, ground cinnamon, kosher salt, and lightly beaten eggs—those are the most important ingredient.

8. Sweet Boiled Plantains and Butternut Squash Soup
Remember what I said about only sharing the best and most unique soups? This one is super-delicious with yellow plantains, coconut milk, onion and garlic, thyme, basil, cayenne, cumin, and black pepper. You can use chicken stock or vegetable stock—your choice.

9. Winter Squash Salad With Tahini and Hazelnuts
This salad is made with kuri squash, but you could substitute another squash if that’s what you had. You’ll also need fennel, lemon, salad greens, hazelnuts, radish, and fresh basil leaves. Top it with a silky homemade tahini dressing with olive oil, lemon, and sea salt.

10. Roasted Spaghetti Squash With Mushrooms, Garlic, and Sage
This elegant dish is easy to make, and includes tip on how to roast your spaghetti squash (and cut it) the easy way. The squash is then sautéed with butter, olive oil, onion, mushrooms, garlic, sage, nutmeg, and pepper. You can leave the cheese off if you’re avoiding dairy completely.

11. Beef-Stuffed Butternut Squash
Instead of the typical veggie fillings of kale, chopped squash, and dried cranberries, this butternut is filled with heart ground beef, onions, carrots, celery, mushrooms, and bacon seasoned with garlic, cinnamon, and black pepper. You can use the cooking fat of your choice, which will also affect the flavor.

12. Crock Pot Butternut Squash
This is more of a method than a recipe, but it’s a method you’ll be so glad to learn about if you’re anything like me and hate wrestling with your squash. If you’ve got the time, you can cook your butternut squash the easy way, in your crock pot, without having to peel or cut it up first.

With lime juice, cumin seeds, ginger, garlic, and sesame seeds, you know this squash is going to have a bright and unique flavor that goes beyond the typical cinnamon and black pepper combination. The slices are a bit caramelized, a bit crispy, and totally delicious.

Delicate is my favorite squash for these reasons: it’s easy to cut, you can eat the skin so you don’t have to peel it, and it caramelized beautifully. These roasted delicate slices are amazing with red onion, pumpkin seeds, and yummy dressing, and more. Replace the cup of chickpeas with a cup of cooked, cubed chicken.

15. Chard Stuffed Acorn Squash With Za’atar and Tahini
These stuffed acorns have a unique flavor from the za’atar seasoning, which you can find at Middle Eastern grocery stores. You’ll also need red onion, garlic, tomato paste, chard, pistachios, tahini, lemon juice, and cumin to complete the list of flavors.

16. Spaghetti Squash Hash With Bacon and Kale
This breakfast hash is healthy, hearty, and totally delicious with spaghetti squash, bacon, olive oil, minced onion and garlic, kale, red wine vinegar, black pepper, and eggs cooked right into the top of it. You could also enjoy this for an easy weeknight dinner!

Delicata boats with my favorite squash! These boats are filled with ghee, butter, or lard, ground pork, baby bella mushrooms, green apple, sea salt, black pepper, garlic, powder, dried thyme, dried sage, and nutmeg. With easy, deliciously bold flavors, this is a kid-friendly squash dish, too.

If you’re looking for new and exciting ways to enjoy seafood beyond glazing and crusting, try this white fish curry with butternut squash, coconut oil, yellow onion, leek, minced ginger, garlic, coconut milk, veggie broth, curry powder, cayenne pepper, cod, and cilantro.
