Ingredients

  • Bananas — 3 medium-sized, very ripe
  • Butter — ½ cups, unsalted and melted
  • Eggs — 2 medium-sized
  • Vanilla extract — 1 tsp.
  • Light brown sugar — 1 cup
  • Ground cinnamon — ½ tsp.
  • Salt — ¼ tsp.
  • Self-raising flour — 1 ½ cups
  • Baking soda — ½ tsp.

Instructions

  1. For preparation, preheat the oven to 350°F degrees.
  1. Grease a 10 x 4.5-inch loaf tin with cooking oil spray. Place a baking sheet in the pan and grease lightly again with cooking oil spray.
  1. In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  1. Add the melted butter while it’s still hot. Add the baking soda, salt, light brown sugar, and cinnamon, and continue whisking with the fork.
  1. Stir in the eggs and vanilla extract when the mixture cools. Beat well with a hand whisk.
