I love breakfast. If I had my way I would eat dessert orbreakfast for every meal but I have to eat other foods because my family would no longer let me be in the kitchen. 🙂 Well, my kids probably wouldn’t mind…and this Blueberry Cheesecake French Toast recipe is sooooo yummy! It was easy to put together, and the homemade blueberry syrup was the perfect topping with the Truvia. The world is a sweeter place with deductible foods to eat and using simple ingredients bring out the best flavors.
This Blueberry Cheesecake French Toast is so easy to make. It only took me about 7 minutes to put together and then had to bake for about an hour. So you can get up and put it together and throw it in the oven first thing when you wake up – or get it ready the night before and just throw it in the oven when you get up and have a delicious amazing breakfast to start your morning out right. The homemade blueberry syrup was the perfect addition and it soaked into the french toast giving you such great juicy flavors in every bite. The blueberries combined with the Truvia were like little bursts of heaven in your mouth.
To start, you are going to take 12 pieces of bread (I used wheat bread) and cut it into pieces (I cut mine into 9ths). Take 1 1/2 bricks of cream cheese and cut them into chunks. You will also use about 1 to 1 1/2 cups of blueberries. Get all of this together and layer them as desired in a bundt pan. When you have your layers set in the pan, you are going to take about 11 eggs, 2 cups of milk, and 1 tsp of Vanilla and beat it together in a large mixing bowl. Pour the mixture over your bread, cream cheese and blueberry mixture and push down on the bread to make sure all of the liquid is absorbed. Don’t flatten it though, just press lightly.
Once you have it ready, cover it with tinfoil, and put it into the oven for about 30 minutes at 350 degrees. Pull it out, uncover it and continue baking it for another 30-40 minutes until browned on top and the eggs are cooked. About 20 minutes before it is done cooking, you will want to get a pot out, and put in 1 cup of water, 2 tbsp of cornstarch, and 1 cup of Truvia together and whisk until boiling. Once it is boiling add 1 cup of blueberries and mix and reduce heat to simmer. Simmer, stirring occasionally, for about 10-15 minutes.
Pull the French Toast out of the oven and let cool slightly before serving. I love how pretty yummy it looks when it comes out. (note – if you don’t want the bigger chunks of cream cheese, you can mix the cream cheese in a mixer with about 2/3 cup of powdered sugar and use as a drizzle in between the layers so it is more evenly spread. Both ways are super good.
Pour a spoonful of the blueberry syrup over the french toast before serving. We also made Bigelow Chamomile Tea to go along with this and it was the perfect meal. I love how much more calm and relaxed I feel after a good meal with a cup of tea and Truvia added the perfect amount of sweetness without the unwanted sugar to my recipe.
