Breakfast Sausage Poutine.
Because when you’re in Montréal, you eat local poutine and then run home to make your own version. 🙂

If you have no idea WHAT poutine is, lemme tell you.
Fries fries + cheese curds doused in gravy.
The end. We can all die happy now.
While your basic, traditional poutine may only be fries, cheese curds, and gravy (I mean really you could end there and be so satisfied), I decided to kick it up a notch and make this Breakfast Sausage Poutine, because
- Let’s be real, I’m giving you a reason to eat french fries for breakfast
- I’ve been obsessed with breakfast lately and literally want to eat it #allday #everyday
- Smithfield Hometown Original Breakfast Sausage Links. These babies are delicious and needed to be showcased in an extremely tasty way.

If not, let me tell you how it’s done, because it’s surprisingly simple!
Let’s start with the base:
Frozen french fries <— how’s THAT for a super awesome hack to keep things quick and easy?! No need to make your own french fries first thing in the morning, and I’m telling you, the frozen fries totally do the trick.
Next up, the filling:
- Smithfield Hometown Original Breakfast Sausage Links <— cook ‘em up on the stove. Once cooked, remove them from the pan and slice them into coins. I may or may not have snacked on the slices while prepping the rest of the poutine. 😉
- Red pepper, green pepper, onion <— cooked in the sausage grease and a little butter for good measure.
Lastly, the poutine gravy:
Melt butter in a sauce pan, then whisk in flour. Cook it for about a minute then whisk in beef broth, ketchup, balsamic vinegar, worcestershire sauce, garlic powder, onion powder, salt, and pepper. Bring to a simmer and cook until thickened.
Now, for the best part.
The Assembly and Devouring:
Plate (or cute fry basket or sheet pan – whatever) —> french fries —> sausage, peppers, and onions —> cheese curds —> g.r.a.v.y —> gooey fried egg.
Trevor keeps it classy and eats his poutine on his own plate, but me? I eat it straight off the serving dish.
The perfect bite includes a crispy fry, a few sausage slices, some tender peppers and onion, a cheese curd, loads of tangy, flavorful gravy, and of course, some of that gooey delicious egg.
I just can’t get enough of all the amazing textures and flavors going on in this!

This Breakfast Sausage Poutine is made with french fries, homemade gravy, breakfast sausage, peppers, onions, and cheese curds!

Ingredients
US Customary - Metric
- 1 (1 1/2 pound) bag frozen french fries baked according to package directions
- 1 (12 oz) package Smithfield Hometown Original Breakfast Sausage Links
Vegetables:
- 1 tablespoon butter
- 1/2 red pepper diced
- 1/2 green pepper diced
- 1/2 yellow onion diced
Gravy:
- 1/4 cup unsalted butter
- 1/4 cup all purpose flour
- 3 cups low sodium beef broth
- 1 tablespoon ketchup
- 1 tablespoon balsamic vinegar
- 1 tablespoon worcestershire
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon pepper
- salt to taste
Other:
- 4 large eggs cooked to your liking
- Cheese curds
Recipe Video
Instructions
Cook french fries according to package directions.
In a large straight edged saute pan, cook sausage according to stovetop package directions.
Vegetables:
In the same pan, melt butter over medium heat.
Once melted, add in peppers and onions, and cook about 5 minutes, or until veggies are cooked to your liking.
Season with salt and pepper, remove from pan, and set aside.
Gravy:
In the same pan, melt butter.
Once melted, whisk in flour, and cook for 60 seconds. stir constantly.
Slowly whisk in the broth, then whisk in ketchup, vinegar, worcestershire, garlic powder, onion powder, pepper, and salt.
Bring the gravy to a simmer while whisking regularly and simmer for 5-10 minutes, or until desired thickness is reached.
Assembly:
Place fries in serving vessel of choice and top with sausage, veggies, and cheese curds.
Drizzle with desired amount of gravy and top with fried eggs.
Eat immediately!
