Ingredients

  • 4 Potatoes
  • 6 Bacon strips
  • 1½ Cup Mozzarella cheese, shredded
  • 3 Tbsps cream cheese
  • 2 Tbsps chopped scallions
  • 3 Tbsps parmesan cheese
  • 2 Tbsps butter
  • Salt and pepper to taste

Directions

  1. In a skillet over medium heat fry the bacon until golden brown (about 3 -5 minutes) and chop it.
  2. With a fork make some holes on the potatoes, and place them in the microwave for 5 or 6 minutes.
  3. Carefully cut the potatoes in half, scoop some of the flesh out of the potato, and place it in a bowl.
  4. Stir in the cream cheese, 1 ½ Tbsp scallions, parmesan cheese, butter, salt, and pepper.
  5. Fill the potatoes with the mix, complete with the mozzarella cheese and the bacon.
  6. Wrap them with plastic wrap and store in the freezer until ready to use.
  7. When ready to serve, bake them in a preheated oven to 370F for 25 – 30 minutes.
  8. Remove from the oven, decorate with some scallions.
  9. Serve and enjoy.
