This orange almond cake recipe is naturally gluten free, and decadently delicious!

You can find the full recipe for the orange almond cake in the printable template below. The dessertfeatures a beautiful balance of texture: the cake is extremely moist from usingextra eggs to compensate for the flour, while the pistachio topping adds an exciting crunch. I’ve made this cake several time. It’s absolutely delicious! I am wondering if it is possible to replace the orange with the pink grapefruit? Both zest and juice? I want to make this cake for a party but I only have pink grapefruits. Thanks!

For this cake, I would not use baking powder but follow the recipe. The trick is to make sure you whisk your egg whites until they are stiff. There is also some variation in how things bake with altitude. I hope it still tasted good. 🙂

Ok, I broke into the cake and it’s AWESOME!!! It may be a little darker than your picture but the taste is out of this world. I used a substitute for the cardamom of ground cloves and nutmeg and it really tastes delicious. I will definitely make it again and just lower the temperature to 300. Thanks for a great recipe!

I started smelling the cake as it was baking and decided to take a peek…good thing I did…it was past gold and almost brown and totally done but with ten minutes still more to go on the timer. Have any of you experienced this? I haven’t eaten it yet. It looks ok and I’m hoping it tastes good!

This is an absolute favorite of mine! And now many of my friends. Do you think I could make the cake 1 day ahead and then the glaze the day of and poke and pour per usual and it will be fine?

Quite a nice tasty cake when its warm. You can taste every element inside.
The cardamon, orange taste, the pistachios. When its cool it tastes not as
strong flavoured. But it is a new favourite of mine and I will make it again.
    Thank you for the recipe!

Thank you for this yummy delight. I found that the batter was a bit dry as I was mixing. Perhaps an actual measurement of how much orange juice to use in the batter would be more accurate than the juice of one orange, considering variations. Would you be able to quantify the amount of juice?

Nevertheless, there were NO complaints and the remaining cake with a cup of coffee at breakfast the following morning was even better 🙂

FAQs

What does almond flour do in gluten free baking? ›

It is also a good source of protein and fiber and gives a moist texture to baked goods. Almond flour is versatile — its nutty flavor and delicate texture work beautifully in all kinds of cookies, cakes, and breads. It can also be used as a gluten-free breading or coating for fried or baked foods.

Why is my orange almond cake bitter? ›

Why is my flourless orange cake bitter? We give our oranges for our flourless orange and almond cake two boils. This is important to remove the bitterness of the pith. Although some recipes say to boil only once and for longer, we think it's better to drain and boil again in fresh water.

How do you keep gluten free cake moist? ›

Add extra liquid: Gluten-free flours tend to absorb more liquid than regular flour, so you may need to add more liquid to your recipes to compensate. This can help to keep your baked goods moist and prevent them from becoming dry and crumbly.

Why is my gluten free cake rubbery? ›

Because gluten-free batters contain more liquid than traditional versions, they typically take longer to bake. If you remove them from the oven too soon, you may develop a gummy, mushy texture.

What is the trick to baking with gluten-free flour? ›

Gluten-free baked goods often benefit from extra liquid to hydrate the flour blends, eliminate grittiness, and achieve a less dense or dry texture.

Why can't you use baking powder with almond flour? ›

Since baking powder contains baking soda, baking powder cannot be used in almond flour baking. Instead, eggs (or applesauce or bananas) can be used as the leavening agent to help baked goods rise and achieve a light and fluffy texture.

How do you get rid of bitterness in orange cake? ›

Solution: boil the oranges. This removes the bitterness as well as softening the oranges to make them “jammy”, which makes the cake damp and sticky inside.

Why did my orange and almond cake sink in the middle? ›

5. My cake has sunk in the middle. There are three main reasons for this: a/ the oven door has been opened before the cake has set, b/ the cake didn't go in the oven as soon as the mixture was ready or c/ there's too much raising agent.

How do you make an orange cake less bitter? ›

By removing much of the pith, you can avoid most of the bitterness. Another option is to boil the peel or whole orange several times which I do in my portokalopita recipe.

Can I just replace flour with gluten free flour? ›

If the original recipe calls for 260 grams of all-purpose flour, substitute with 260 grams of your blend. Beat the batter more. Because gluten-free flours provide less structure than all-purpose, the batter or dough you make with them may require more beating than that which you are accustomed.

Which gluten free flour is best for cakes? ›

Oat Flour. With its creamy, earthy flavor and delicate texture, gluten-free oat flour is a staple of my gluten-free baking recipes. It bakes up soft and smooth, adding necessary starch to many GF baked goods and keeping them moist and tender due to its high fat content and stable protein structure.

Should you let gluten free cake batter sit before baking? ›

We recommend covering your batters and doughs and letting them rest for at least half an hour. Note: This will also help batters become thicker and doughs to firm up.

Can I use almond flour in place of all purpose gluten free flour? ›

Try baking up treats using only almond flour, and you'll be rewarded with super-tender and moist cakes, pleasantly short shortbread, and soft, fudgy brownies ... all of them gluten-free. If you've gone gluten-free and all-purpose flour is out, almond flour is exactly what you need.

Can I use almond flour instead of gluten-free all purpose? ›

Almond flour is a popular gluten-free flour that you can use in place of all-purpose flour with a few considerations. Learn the differences between almond flour and all-purpose flour.

What are the benefits of using almond flour? ›

Almond flour contains a lot of prebiotic dietary fiber. This type of fiber is digested by bacteria in your small intestine. Getting enough prebiotic dietary fiber leads to a healthier, more efficient digestive system. Almond flour is full of vitamin E, which is an antioxidant known to help your brain.

Can I replace all-purpose flour with almond flour? ›

Almond flour is a little more moist than wheat flour, and doesn't have quite the same binding qualities. You'll do best to substitute 1:1 to begin with, as many recipes respond well to this direct replacement. But be prepared to add more almond flour as you go to compensate for the wetter batter.
