As a busy mom I needed to get more vitamins in my diet. This delicious and healthy green smoothie recipeaccomplishes just that! Kale, Spinach, Pineapple and Coconut Milk make this smoothie fabulous! Bright green in color but fresh and sweet in taste! You and your family will love this! I am horrible about eating correctly lately. Sometimes, I am even terrible at eating in general. 5 pm will roll around and I realize I didn’t have a meal all day! Sometimes I pop a few grapes in my mouth when I feed the little {yes they eat during the day!} but when one or both are sitting nicely at the table eating lunch or dinner, I use that time to load the dishwasher or sweep the floor. I’m still in the room with them and in the conversations but I am taking advantage of them being “contained and entertained” at the moment! {If you are new here, My husband travels ALL. THE. TIME} Like weeks on end so anything to do with ME gets put on the back burner and apparently that even includes eating…{shaking my head at myself!} I can drink all the live long day. {No, no…not wine all day long – just after kid’s bed time :) } I mean I will have coffee, iced tea, green tea, & milk. I drink instead of eat. Know why?…because it’s easier to drink than to make myself a meal and sit down and eat it. Sad, I know! But what’s not sad is this delicious concoction I have discovered! A few trial and errors and here is what we have. A perfect blend of Kale, Spinach, Pineapple and Vanilla Coconut Milk. The Kale and spinach obviously give you the bright green color and tons of vitamins and the coconut milk and frozen pineapple give you that fruity tropical flavor that hides the fact you are drinking spinach! The best part is that you don’t need a fancy blender either! I used this GE Single Serve BlenderTropical Green Smoothie Recipe (4) . It’s very affordable and works great to achieve that smooth consistency so you don’t feel like you are drinking a salad! I originally bought it to make Ryan his baby food back in 2011 and it’s still going strong after many smoothies, ground coffee beans, pina coladas, salsas and cheeses! I normally make my smoothies based off measurements of this plastic blender cup. I measured-ish for this recipe but here are visuals for you anyway! 1 rib of kale chopped (1 cup), 1 cup of spinach, packed, 1 cup of frozen pineapple, fill cup with coconut milk (I didn’t measure this…maybe 1/2 – 3/4 cup? Screw on the blade, put on the blender and blend. My rule of thumb is to let it blend long enough that you get a inner cyclone so big it pushes the smoothie all the way tot eh top of the cup like in the last picture above! That ensures that you aren’t drinking pieces of spinach! :) If you can’t get over the green color…then just put it in a colored cup with a lid and drink through a colored straw…I promise the taste of the pineapple and the vanilla coconut milk will have you thinking tropical drink versus green drink!

I made it, set it down, came back a few minutes later to find it half drank by a certain 2 year old. Kids love it too! Give it a fun name, like a Green Goblin drink, and you are golden!

Ingredients

  • 1 cup kale, chopped
  • 1 cup baby spinach
  • 1 cup frozen pineapple
  • 1/2-3/4 cup vanilla coconut milk

Instructions

  • Blend ingredients until smooth and creamy. If needed, add more coconut milk to thin smoothie.

  • Simple as that!
