What Is A Frittata
A frittata is an Italian egg dish that can be served at breakfast, brunch, lunch or dinner. It's an easy egg dish usually made in a cast iron pan. Frittatas are enriched with heavy cream or whole milk, other optional ingredients are added before being baked in the oven until just barely firm in the middle.
They're often flavored with fresh herbs and fresh veggies like red bell peppers, green peppers, or mushrooms as well as savory bits of meat like bacon or ham. Shredded sharp cheddar cheese, swiss cheese, crumbled goat cheese or feta cheese are often melted on top or sprinkled over after baking. It can be served hot, warm or cold.

Variations Around The World
A Spanish version is a potato frittata called tortilla, not to be confused with the flatbread. It is also very tasty.
For those on a low-cal diet, an egg-white frittata that omits the egg yolks is popular. In France, they make a quiche with a pastry crust and egg filling or an omelet. These egg, vegetable and cheese dishes are prepared differently though the ingredients are very similar.
