My absolute favorite cookie ever is the double chocolate chip cookie from Subway. They are gooey, soft and so chocolatey! I know that is not really a word, unless of course you are a chocolate lover. Which I am, so chocolatety it is.

I noticed our local store hasn't been putting out the double chocolate chip cookie so I had to make my a subway copycat cookie recipe of my own. These cookies were actually tested side by side to a Subway cookie until I got the recipe just right. We will never be able to get them exact, but it is pretty darn close.

The feedback I hear is that people actually like these better, because the Subway version usually tastes like it needs to be cooked longer. Almost a bit "too fudgey". We wouldn't normally think there was a such thing, but there is a difference between fudgey and a raw batter flavor.

What you need for this subway copycat cookie

(just quick tips, the full recipe is below)

NOTE* there are a few important keys to the preparation of these cookies that will ensure they come out as close to the Subway version as possible.

*Make sure the eggs are room temperature. Trust me, it is worth planning for. Add eggs one at a time. Do not 1 bowl this, make sure to sift together dry ingredients! I normally break all these baking rules, but it is necessary for this subway copycat cookie.

What to do to make this subway cookie recipe:

Preheat the oven to 350°

Cream together the butter & sugar in a medium bowl, add the vanilla and one egg at a time. Beat on low with a mixer.

In another bowl, sift together the flour, Hershey's cocoa, baking soda, and salt.

Add the flour mix into the butter mix slowly and beat until well blended.

Add the chocolate chips and mix

Spoon about 2 inches apart onto a cookie sheet

Bake for about 10-12 minutes depending on oven temps.

Short cut recipe: Use an inexpensive brownie mix, prepare according to the package EXCEPT:

1. Use ½ the oil the package calls for

2. Add ½ cup more flour, Mix

3. Add the chocolate chips

4. Bake on 350 for about 15 mins. (time may vary, check every minute until done)

How Do I Tell If Cookies Will Spread or Rise?

One of those most annoying things about baking is the uncertainty if it is something you only do on occasion. For seasoned bakers they will be able to know what is going to happen in that oven, for us... maybe not so much. One way to tell if your cookies will spread or rise is by looking at the thickness of the cookie dough.

If the cookie dough is thick and heavy, the chances of the cookies spreading out into each other is very slim. A thin cookie batter will likely spread. One tip for avoiding cookie spreading is to make sure butter is room temperature softened, not heated in the microwave.

Even if you can heat your butter to softened, but not melted, it is still going to be more warm than what your cookie recipe wants it to be.

Ingredients

  • ⅓ cup white sugar
  • 1 cup light brown sugar- packed
  • 2 teaspoons vanilla extract
  • 1 cup softened butter
  • 2 large room temperature eggs
  • 2 cups all purpose flour
  • ⅔ cup Hershey's DARK baking cocoa
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 6 ounces semi-sweet chocolate morsels
  • 6 ounces white chocolate chips

Instructions

  1. Preheat the oven to 350°
  2. Cream together the butter & sugar in a medium bowl, add the vanilla and one egg at a time. Beat on low with a mixer.
